This classic salad recipe comes from my friend Connie MacDonald via her sister Amy. (Thank you, Connie and Amy!)<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Connie\u2019s instructions call for tossing the entire salad together. When I made it I had fewer people than it serves so I ended up plating all the ingredients separately and letting my guests help themselves. That way, the leftovers could be combined again the next day.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">However you mix it, the salad gives you a lovely way to say farewell to summer\u2019s bounty. And it gives me a delicious way to remember my late mother, who adored Salade Ni\u00e7oise.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">She always included a little hard-boiled egg in her Salade so I did so as well (as you can see in the photo of my version). It\u2019s not obligatory, however!<\/span><\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2013\/09\/Salade-Ni\u00e7oise-\u00e0-la-Constance.pdf\" target=\"_blank\"><strong><span style=\"font-size: 11pt;\">Salade Ni\u00e7oise \u00e0 la Constance<\/span><\/strong><\/a><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the salad:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">8 small red potatoes<br \/>\n1-1\/2 pounds French (or any good, fresh) green beans<br \/>\n1 cup Greek olives<br \/>\n1\/2 red onion<br \/>\n1 pint cherry tomatoes<br \/>\na couple of big handsful of Mesclun greens (3 to 4 cups)<br \/>\nabout 1 pound tuna\u2014canned, in packets, or fresh (if it\u2019s fresh you should obviously quickly cook it before using it!)<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the Lemon Vinaigrette (more or less to your taste)<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">1\/4 cup freshly squeezed lemon juice<br \/>\n1\/2 cup olive oil<br \/>\n2 teaspoons salt<br \/>\n2 teaspoons pepper<br \/>\n2 teaspoons garlic powder (Tinky used 1 fresh garlic clove, minced)<br \/>\n1 teaspoon Dijon mustard<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Boil the potatoes. While they are cooking to al dente, steam green beans. Set aside to cool to room temperature.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Dice the olives and onion. Set them aside separately.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Whisk together the vinaigrette.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Wash the tomatoes and the salad greens and set them aside. \u201cBy this point,\u201d says Connie, \u201cyour counter top looks like an awesome Proven\u00e7al cooking show with many bowls full of colorful veggies. You can practically feel your hair grow in anticipation of the impending nutritive boost.\u201d<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">When the potatoes are cooked, drain them and let them cool until you can safely handle them. Slice them into 1\/4-inch-thick slices and toss the warm potatoes with half of the vinaigrette. (I, Tinky, had the tiniest potatoes in the world so many of them didn\u2019t need slicing.)<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Find a really big bowl, toss and mix in all the ingredients, and cover them with the remaining vinaigrette. Toss gently, but thoroughly.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Turn the salad out onto a large platter and serve with fresh croissants.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">\u201cT.D.F. (to die for),\u201d says Connie. The girl has a point.
