I LOVE cherries\u2014and I couldn\u2019t resist the chance to cook with them during their short but glorious local season.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">My friend Michael Collins, chef at the\u00a0new Mexican Fusion restaurant <a href=\"http:\/\/ponterestaurante.com\/\" target=\"_blank\">Ponte<\/a> in Shelburne Falls, Massachusetts, had recently informed me that he makes gazpacho with cherries. So of course I brought him along to cook with me on <a href=\"http:\/\/wwlp.com\/category\/mass-appeal\/\" target=\"_blank\"><em>Mass Appeal<\/em><\/a>. Michael actually worked a lot harder than I did, but we all had a good time.<\/span><\/p>\n<p style=\"text-align: left;\"><a href=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/goodtimeweb.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11134\" src=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/goodtimeweb.jpg\" alt=\"goodtimeweb\" width=\"360\" height=\"215\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/goodtimeweb.jpg 360w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/goodtimeweb-300x179.jpg 300w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I\u2019m not sure I\u2019d swear that I could taste the cherries in his soup\u2014but whatever I tasted, it was awfully good: spicy and substantial. He was kind enough to share the recipe with me, and here it is. If you watch the video below, you\u2019ll see that some of his quantities are subject to improvisation; I KNOW he threw in a lot more herbs and vinegar than he calls for in the recipe!<\/span><\/p>\n<p style=\"text-align: left;\"><a href=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/Cherry-Gazpacho-web.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11135\" src=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/Cherry-Gazpacho-web.jpg\" alt=\"Cherry Gazpacho web\" width=\"360\" height=\"312\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/Cherry-Gazpacho-web.jpg 360w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/Cherry-Gazpacho-web-300x260.jpg 300w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><strong><span style=\"font-size: 11pt;\"><a href=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/07\/Ponte-Cherry-Gazpacho.pdf\" target=\"_blank\">Ponte Cherry Gazpacho<\/a><\/span><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">1 pound ripe tomatoes, seeded, diced, an drained (or 2 cups canned seeded tomatoes)<br \/>\n1 pound pitted cherries (about a pint)<br \/>\n1 small red onion<br \/>\n1\/2 teaspoon chipotle pepper in adobo<br \/>\n1\/2 cup extra-virgin olive oil<br \/>\n1 cup vegetable stock or water<br \/>\n1 teaspoon sea salt<br \/>\n1 clove garlic<br \/>\n1 teaspoon cilantro or parsley<br \/>\nthe juice of 1 lime and the zest of 1\/2 lime<br \/>\n1 tablespoon white wine vinegar<br \/>\n3 tablespoons blanched almonds<br \/>\n2 tablespoons mint leaves<br \/>\n2 sliced pitted cherries and mint leaves for garnish<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Place all ingredients (except the cherries and mint for garnish) in a blender. Blend well.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Chill in the refrigerator for several hours.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Serve in your favorite bowl or glass, topped with cherry slices and mint.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Serves 6 as a first course.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I prepared something very simple, a cherry cobbler, which we dubbed \u201cCherry Plop Pie\u201d on the air since the topping is simply plopped on. The cherries looked gorgeous in this recipe, and the cobber or pie or whatever you want to call it was well received.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Thanks to <a href=\"http:\/\/www.oxo.com\/\" target=\"_blank\">Oxo<\/a> for sending me the cherry pitter I used! Yes, one does have to separate the pits manually from the cherries in a few cases, especially if one is a klutz in the kitchen like me. Cherry Plop Pie)<\/a><\/span><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the fruit base:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">1\/2 cup sugar<br \/>\n2 tablespoons cornstarch<br \/>\n4 cups pitted cherries<br \/>\n2 tablespoons lemon juice<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the cobbler crust:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">1 cup flour<br \/>\n2 tablespoons sugar<br \/>\n1-1\/2 teaspoons baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n1\/4 cup (1\/2 stick) butter<br \/>\n1\/4 cup milk<br \/>\n1 egg, beaten<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the topping:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">sparkling sugar as needed<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Begin by making the base. Combine the sugar and cornstarch in a smallish nonreactive pot. Stir in the cherries and lemon juice. Cover this mixture and let it sit for a while until the cherries juice up. (Half an hour should do!)<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Preheat the oven to 400 degrees. Butter a 1-1\/2 quart casserole dish.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Uncover the cherry mixture and bring it to a boil, stirring occasionally. Boil, stirring gently, for 1 minute. Remove the fruit from the heat. Spread the cherry mixture in the prepared baking dish.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">To make the crust whisk together the flour, sugar, baking powder, and salt. Cut in the butter, but don\u2019t overdo the process. You should still have tiny pieces of butter in the mixture.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Whisk together the milk and egg. Add them to the dry ingredients, and mix just until moist. Drop this mixture onto the fruit mixture, and spread it around to cover the fruit. Sprinkle sparkling sugar on the top for crunch and glow.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Bake until lightly browned, 20 to 25 minutes.
