I just don\u2019t really see the point of putting it into a pastry crust. I dutifully make pies in the summer, of course, because friends and family members enjoy eating them. And at this time of year, pies are de rigueur; they fairly shriek \u201cThanksgiving.\u201d So I bake them\u2014and I try to be cheerful while doing so.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Sometimes I cheat, however. This recipe is an example of that cheating.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Nantucket Cranberry Pie is something I learned to make from my late neighborhood matriarch Mary Parker, a.k.a. Gam. What I love about it is \u2026 it isn\u2019t really a pie. It\u2019s more a cross between a cake and a huge cookie.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">It\u2019s also remarkably easy to put together\u2014no rolling of crust, just a bit of washing, a bit of tossing, and a bit of whisking. Try it, and the pie part of your Thanksgiving preparation will be a snap.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I love the recipe so much I put it in my <em><a href=\"http:\/\/tinkycooks.com\/tinkys-books\/\" target=\"_blank\">Pudding Hollow Cookbook<\/a><\/em>, which makes a lovely holiday (or hostess) gift, by the way. And maybe a tiny piece of pie.<\/span><\/p>\n<p style=\"text-align: left;\"><a href=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/11\/NCpieweb.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11340\" src=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/11\/NCpieweb.jpg\" alt=\"NCpieweb\" width=\"432\" height=\"324\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/11\/NCpieweb.jpg 432w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/11\/NCpieweb-300x225.jpg 300w\" sizes=\"(max-width: 432px) 100vw, 432px\" \/><\/a><\/p>\n<p><strong><a href=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2015\/11\/Nantucket-Cranberry-Pie.pdf\" target=\"_blank\">Nantucket Cranberry Pie<\/a><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">2 cups raw cranberries<br \/>\n1-1\/2 cups sugar<br \/>\n1\/2 cup chopped walnuts (optional but good)<br \/>\n3\/4 cup melted sweet butter<br \/>\n2 eggs, beaten<br \/>\n1 cup flour<br \/>\n1 teaspoon vanilla or almond extract<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Grease a 9- or 10-inch pie plate. Preheat the oven to 375 degrees. Wash and pick over the cranberries. Put them in the bottom of the pie plate. Sprinkle with 1\/2 cup of the sugar and the walnuts. Make a batter of the remaining ingredients, first combining the butter and the remaining sugar and then adding the eggs, flour, and flavoring. Pour the batter over the cranberries.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Bake for 35 to 40 minutes. Top with whipped cream. (Ice cream works well, too. Or just serve it alone.)
