I\u2019ve put it in a lot of stir fries. Yesterday, however, I felt compelled to bake \u2026 so I made these easy bars or squares or brownies or whatever you\u2019d like to call them. They\u2019re light and chock full of the green stuff.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>1\/2 cup (1 stick) melted sweet butter<br \/>2 cups grated zucchini<br \/>1 cup sugar<br \/>1 egg. beaten<br \/>1\/2 teaspoon baking soda<br \/>1\/2 teaspoon baking powder<br \/>1\/4 teaspoon salt<br \/>1 teaspoon ground cinnamon<br \/>1 cup flour<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p><em>Instructions:<\/em><\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Preheat the oven to 350 degrees. Line an 8-by-8-inch pan with foil and then grease and flour the foil.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Stir together the melted butter and the sugar, followed by the grated zucchini. Mix in the egg, stirring well to incorporate; then add the baking soda, the baking powder, the salt, and the cinnamon. Stir in the flour, and pour the batter into the prepared pan.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Bake until a toothpick inserted into the center of the concoction comes out clean, about 35 to 40 minutes.
