The\u00a0recipe below is adapted from its <em>Best of Cranfest<\/em> cookbook. Lyda Lind of Pine River, Wisconsin, entered this festive bread in a 1990 competition.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">I would never have thought of combining cranberries with coconut, but the combination would be a winner in any book. So don&#8217;t be\u00a0worried if\u00a0this bread is\u00a0not like any quickbread you&#8217;ve had before. It feels more like a muffin or scone&#8211;crispy on the outside and chewy on the inside.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">1-1\/2 cups sugar<br \/>\n1\/2 cup (1 stick) sweet butter<br \/>\n2 eggs, well beaten<br \/>\n1 teaspoon cinnamon<br \/>\n1 teaspoon baking soda<br \/>\n2 teaspoons baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n3 cups flour<br \/>\n2 cups chopped cranberries (I just cut them in half)<br \/>\n1 cup white raisins<br \/>\n1 cup flaked coconut<br \/>\n1 cup pecans (optional\u2014if you use them, cut the coconut back to 1\/2 cup)<br \/>\n2 teaspoons vanilla<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">Preheat the oven to 325 degrees. Add the eggs and mix well. Stir in the cinnamon, baking soda, baking powder, and salt, and blend thoroughly.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">Measure out the flour, and place 2 tablespoons of it into a bowl along with the cranberries, raisins, coconut, and pecans (if using). Mix well, and add this fruit mixture to the butter batter.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &quot;Verdana&quot;,&quot;sans-serif&quot;;\"><span style=\"font-size: 11pt;\">Blend in the remaining flour and the vanilla. You will have a fairly stiff batter.
