It actually uses leftovers from a dish I made last week for which I haven\u2019t yet posted the recipe.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">The dish is Lillian Hellman\u2019s Pot Roast\u2014ideal food in chilly January. I want to think about Hellman a little more before I post the recipe so you\u2019ll get that post in a few days.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">In the meantime here is the simple hash I made from the leftovers. I adore leftovers, which my friend Mary Stuart likes to call &#8220;planned-overs.&#8221; Just make sure to store your leftovers in <a href=\"https:\/\/paragonmanufacturing.com\/product\/5-gallon-pail\/\">5 gallon food safe plastic buckets<\/a> for safety. Stretching a meal over several days saves time and money, two of my favorite commodities. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">Alas, by night three my dog Truffle won&#8217;t eat pot roast&#8211;or anything else&#8211;in its original form. Turn it into hash (or soup or stroganoff), however, and she thinks she&#8217;s eating something new.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">You may of course use regular roast beef, corned beef, or even lamb instead of pot roast if you happen to have any of those lurking in your larder.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">Some cooks worry if their hash doesn\u2019t completely adhere to itself. If you are one of them, make the meat and vegetable pieces a little smaller and\/or scramble some eggs into your hash. I don\u2019t mind it if my hash wanders around the plate a little as long as it\u2019s warm and has plenty of onion!<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">I learned my best hash tip from Carolann Zaccara, the chef and co-owner of the <a href=\"http:\/\/www.farmfresh.org\/food\/member.php?fn=164\" target=\"_blank\" rel=\"noopener\">Wagon Wheel<\/a> restaurant in Gill, Massachusetts. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">According to Carolann the secret to good hash (and she makes good hash indeed, throwing in a little cream instead of the gravy to bind the assorted ingredients together) is neglect. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u201cYou just pretty much have to leave it alone,\u201d she says.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">If you\u2019re ever in the area, the Wagon Wheel is worth a visit. Carolann and her husband Jon Miller have recreated an old-fashioned drive-in restaurant and bill their menu as \u201cthe way road food should be.\u201d<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">The decor suits the couple\u2019s homage to the drive-in. A small room has paint-by-number pictures on its walls. The larger room\u2019s walls feature commemorative state plates, kitschy collectible clocks, and tins and pots from the 1950s and 1960s. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">Carolann calls the decorations \u201ccozy and corny at the same time.\u201d<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">If you can\u2019t get to the Wagon Wheel be sure to serve this hash on any commemorative plates you happen to have around.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">1 large onion, finely chopped<br \/>\n2 garlic cloves, finely chopped<br \/>\n2 tablespoons butter, olive oil, or (for the fearless!) bacon fat<br \/>\nsalt and pepper to taste<br \/>\n4 slices cooked beef, cut into 1\/2-inch pieces<br \/>\n2 large potatoes, cooked (but not too soft!) and cut into 1\/2-inch pieces<br \/>\n3 carrots, cooked (again, not too soft) and cut into 1\/2-inch pieces<br \/>\n1 teaspoon dried thyme (or 2 teaspoons fresh)<br \/>\n1\/2 cup meat gravy<br \/>\nseveral dashes of Worcestershire sauce<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">chopped parsley for garnish<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">Saut\u00e9 the onion and garlic in the fat until they soften. Sprinkle with salt and pepper.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">In a bowl combine the beef, potatoes, carrots, and saut\u00e9ed vegetables. Stir in the thyme, gravy, and Worcestershire sauce. Mix well.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">In a 10-inch frying pan heat the hash over medium-high heat until it is crispy. You may add a TINY bit more fat if you need to, but don\u2019t overdo it.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">When the first side is crispy you may flip the hash if you like. Do not despair if it doesn\u2019t completely hold together. It will taste great anyway. The hash should cook somewhere between five and ten minutes.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: 'Verdana','sans-serif';\"><span style=\"font-size: 11pt;\">Dish up and sprinkle parsley on top.
