It\u2019s been so hot lately that I don\u2019t have the heart to post the recipe, however! Presumably we\u2019ll have a cooler spell before summer sets in permanently.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">In the meantime, here\u2019s a recipe that doesn\u2019t involve turning on the oven. It\u2019s easy to boot. And it\u2019s extremely toothsome.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\">\n<p><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">I recommend it with all the options, but one of my tasters felt the Prosciutto was out of place (too Italian for a southwestern sandwich) so I am\u00a0exercising caution\u00a0in my recipe writing.<\/span><\/span><\/p>\n<p><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/messcookweb.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7581\" title=\"messcookweb\" src=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/messcookweb.jpg\" alt=\"\" width=\"360\" height=\"235\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/messcookweb.jpg 360w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/messcookweb-300x195.jpg 300w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/a><\/span><\/span><\/p>\n<\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><strong><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/Asparagus-Quesadillas.pdf\" target=\"_blank\">Asparagus Quesadillas<\/a><\/strong><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">canola or peanut oil as needed for light frying<br \/>\n1\/4 red onion, thinly sliced<br \/>\n1\/2 pound asparagus, cut into 1-inch pieces and blanched for 1 minute<br \/>\nlots of freshly ground pepper<br \/>\n4 small flour tortillas<br \/>\n1\/2 to 1-1\/2 cups grated cheese (cheddar, Monterey Jack, or a blend)<br \/>\n4 slices Prosciutto (optional but good)<br \/>\nchopped cilantro to taste (ditto)<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">In a small saucepan heat a small amount of oil and saut\u00e9 the slices of onion until they brown around the edges\u2014about 10 minutes over low to medium heat. Stir in the asparagus, and toss for a minute or two. Grind pepper over the combination and toss again. Remove from heat.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">In a larger pan or griddle place a small amount of additional oil and let it heat up. Place the first tortilla in the oil, let it heat for just a moment, and then flip it over. Toss on cheese to taste plus a quarter of the asparagus mixture.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">At this point you may add a slice of Prosciutto (for a sort of Italian-American quesadilla) or a little cilantro (for a more Mexican-American quesadilla).
