It was a corner piece&#8230;&#8230;.<\/p><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">This cool and cooling dessert\u00a0fulfills TWO functions on my blog today!<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">First, it represents June (just in the nick of time!) for my <a href=\"http:\/\/www.ourgrandmotherskitchens.com\/?cat=919\" target=\"_blank\" rel=\"noopener\">Twelve Cookies of Christmas<\/a> series.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Second, it pays homage to the <a href=\"http:\/\/www.massfarmersmarkets.org\/?ShowPage=FMFMCUSTOM2.aspx\" target=\"_blank\" rel=\"noopener\">Mass Farmers Markets Strawberry Dessert Festival<\/a>, which\u00a0will run through\u00a0July 4 at 50 locations throughout the Commonwealth of Massachusetts.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Chefs in restaurants and markets are getting creative with strawberries and donating a portion of the desserts\u2019 revenues to the Federation of Massachusetts Farmers Markets, which supports farmers and markets statewide.<\/span><\/span><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\">\n<p><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">The closest participating restaurants are in Northampton, about an hour away from me. So I\u2019m contributing to the festivities with a homemade (and home enjoyed) strawberry dessert.<\/span><\/span><\/p>\n<p><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/StrawberryFestival_web2010.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7811\" title=\"StrawberryFestival_web2010\" src=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/StrawberryFestival_web2010.jpg\" alt=\"\" width=\"299\" height=\"448\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/StrawberryFestival_web2010.jpg 299w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/StrawberryFestival_web2010-200x300.jpg 200w\" sizes=\"(max-width: 299px) 100vw, 299px\" \/><\/a><\/span><\/span><\/p>\n<\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">The idea for this particular dessert came from the manufacturers of my go-to key-lime juice, <a href=\"http:\/\/www.keylimejuice.com\/\" target=\"_blank\" rel=\"noopener\">Nellie &amp; Joe\u2019s<\/a>.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">I have to admit that I\u2019m ambivalent about whipped topping (a.k.a. Cool Whip). Part of me loves the idea of eating something that resembles whipped cream (sort of) and getting by with very few calories.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Another part of me\u00a0thinks about the ingredients\u00a0and shudders. Basically, as you probably know, the stuff contains corn syrup, chemicals, and air.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">I compromise with my principles\u00a0by not eating\u00a0it very often. My mother (who likes these bars very much, by the way) taught me to follow a path of moderation whenever possible.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Someday I may try making a key-lime pie with fresh strawberries and eschew the whipped topping.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">In warm weather it was very handy to make this no-bake dessert, however.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">So here are the bare bars.<\/span><\/span><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\">\n<p><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">One word of warning: Be careful during the folding process not to hold anything slippery. As I was attempting to take a photo of the folding process, my little pink camera slid right in. SO FAR it appears to have survived. Luckily, the bars are pink so any staining that might have occurred is not discernible.<\/span><\/span><\/p>\n<p><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/foldingstrawkweb.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7812\" title=\"foldingstrawkweb\" src=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/foldingstrawkweb.jpg\" alt=\"\" width=\"360\" height=\"270\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/foldingstrawkweb.jpg 360w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/06\/foldingstrawkweb-300x225.jpg 300w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/a><\/span><\/span><\/p>\n<\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/06\/Key-Lime-Strawberry-Bars.pdf\" target=\"_blank\" rel=\"noopener\"><strong>The Bars<\/strong><\/a><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">2 cups cut-up strawberries<br \/>\n1\/4 cup sugar<br \/>\n1 smidgeon butter<br \/>\n1\/2 cup (1 stick) butter<br \/>\n1\/2 cup sugar<br \/>\n2 cups crushed graham crackers or pretzels (If you choose to use the pretzels\u2014which give the bars a nice salty crunch\u2014be sure to crush these pesky critters in a food processor; you need to get them as fine as possible. You can also use a <span data-sheets-value=\"{&quot;1&quot;:2,&quot;2&quot;:&quot;Gluten Free Soft Pretzel Baking Mix&quot;}\" data-sheets-userformat=\"{&quot;2&quot;:4225,&quot;3&quot;:{&quot;1&quot;:0},&quot;10&quot;:2,&quot;15&quot;:&quot;Arial&quot;}\"><a href=\"http:\/\/momsplaceglutenfree.com\/products\/gluten-free-soft-pretzels-with-sea-salt-mix\">Gluten Free Soft Pretzel Baking Mix<\/a> if you&#8217;re allergic to gluten.<\/span>\u00a0I may actually have quit a little early!)<br \/>\n1 14-ounce can sweetened condensed milk<br \/>\n1\/ 2 cup key-lime juice<br \/>\n8 ounces whipped topping, cold but not frozen<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">The day before you want to make the bars combine the strawberries and sugar in a saucepan. Let them sit until they juice up (an hour will probably do).<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Bring the strawberry mixture to a boil, and stir in the butter. Reduce the heat and simmer until the strawberries are jam-like but not completely solid, stirring from time to time. The time needed will depend on the juiciness of your strawberries and the degree of heat your stove emits on \u201clow\u201d; my fairly firm berries and gas stove took about half an hour.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Remove the mixture from the heat and stir for five minutes, breaking up pieces of strawberry if they remain. Refrigerate the mixture overnight.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">The next day line a 9-by-13-inch pan with foil. Melt the butter. Add the sugar and cracker or pretzel crumbs, and press the mixture into the pan. Set aside.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Beat together the strawberry mixture, condensed milk, and key-lime juice. Fold in the whipped topping. Mix thoroughly but gently.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Use a spatula to spread the strawberry mixture on top of the crumb crust. Cover the pan carefully (avoid hitting the top of the bars with your cover!) and freeze the mixture for 6 hours or overnight.<\/span><\/span><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\">\n<p><span style=\"font-family: &amp;amp;\"><span style=\"font-size: 11pt;\">Let the bars stand at room temperature for 15 minutes before slicing and serving.
