I\u2019m not sure why. I do eat meat. Somehow it doesn\u2019t stimulate my memory, senses, and creative juices as vegetables, breads, desserts, and appetizers do, however.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Today I\u2019m popping a quick meat recipe on anyway. Whenever I see a flank steak at the meat counter of <a href=\"http:\/\/www.americanprofile.com\/article\/320.html\" target=\"_blank\">Avery\u2019s General Store<\/a> I\u2019m tempted to make this\u00a0truly easy dish. I love marinating things, and flank steak really rewards you with flavor and texture if you marinate it.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">I\u2019m sorry that the measurements aren\u2019t exact. Luckily, you can\u2019t really go wrong with the recipe. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Next time I make it I\u2019ll try to get something written down. But this is just one of those weeks!\u00a0 Lots of phone calls to make and answer, lots of\u00a0recipes to test and write up,\u00a0a number of songs\u00a0to practice, and a bored elderly mother to entertain. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Earlier today in her\u00a0infatuation with the autumn\u00a0sun\u00a0Jan made an unauthorized break from the house with her walker. I thought she was napping until the Hawley, Massachusetts, road crew showed up at the door.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">&#8220;Your mother seems to be hiking to Charlemont,&#8221; Wayne Clark told me in his laconic drawl. <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">When I found\u00a0my mother\u00a0she was WAY down the street chatting\u00a0unrepentantly with a man she had found while walking.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">(Believe me, it&#8217;s not easy to find stray men here in Hawley!) <\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">&#8220;I knew you&#8217;d find me,&#8221; she said with a big grin on her face. I had to grin back as I thanked the man and the road crew.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Thank goodness for small towns! It takes a village to care for more than just children&#8230;&#8230;.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><strong><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/10\/Tinkys-Favorite-Flank-Steak.pdf\" target=\"_blank\">The Flank Steak<\/a><\/strong><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>\u00a0<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">1 flank steak (1-1\/2 to 2 pounds)<br \/>\nseveral cloves of garlic, peeled and sliced into tiny slices<br \/>\nsoy sauce as needed (enough to cover but not submerge your steak)<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">With a small sharp knife make small slits all over one side of your flank steak. Insert pieces of garlic into each slit.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Pour soy sauce onto the steak; then turn it over and repeat the cutting, inserting, and pouring on that side as well.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Allow the steak to marinate at room temperature for at least 1-1\/2 hours (a little longer is best, but if you want to marinate it for several hours you\u2019ll need to refrigerate it). Turn it every 1\/2 hour or so to make sure both sides stay moist.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Remove the steak from the soy sauce and place it on a hot grill (or on a grill pan). Grill it for about 4 minutes on each side\u2014maybe a little longer\u2014so that it is rare. If you overcook your steak it will be tough. It doesn\u2019t have to be as rare as the photo above, however.
