I\u2019ve recently been using up some of our Thanksgiving-turkey leftovers\u00a0in one of my favorite comfort foods, turkey tetrazzini.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Tetrazzini the dish (also made with chicken, salmon, tuna, and for all I know tofu) was named after Tetrazzini the singer.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Luisa Tetrazzini (1871-1940) was a coloratura soprano known as the Florentine Nightingale. She allegedly first took to the stage at the age of three in her native Italy. In her prime she was the toast of opera lovers in both Europe and the United States.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Although she was involved in a number of contractual lawsuits, La Tetrazzini was by all accounts a good natured woman.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Small of stature but by no means small of figure (calling her stout would be kind), she adored glamorous gowns, jewelry, and hats.<\/span><\/span><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<p style=\"text-align: center;\">\n<div id=\"attachment_8903\" style=\"width: 318px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/12\/Luisahatweb.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-8903\" class=\"size-full wp-image-8903 \" title=\"Luisahatweb\" src=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2010\/12\/Luisahatweb.jpg\" alt=\"\" width=\"308\" height=\"449\" srcset=\"https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/12\/Luisahatweb.jpg 342w, https:\/\/ourgrandmotherskitchens.com\/wp-content\/uploads\/2010\/12\/Luisahatweb-205x300.jpg 205w\" sizes=\"(max-width: 308px) 100vw, 308px\" \/><\/a><p id=\"caption-attachment-8903\" class=\"wp-caption-text\">(Library of Congress)<\/p><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Like other many other sopranos (including me!), Luisa Tetrazzini had a weakness for comfort food. The precise provenance of the recipe named after her is in doubt; a number of different chefs and restaurants claimed to have invented it. It is clear, however, that it was created in Tetrazzini\u2019s honor.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Whoever originated it, turkey tetrazzini is my second favorite thing to make out of leftover turkey. (First on the list comes the humble turkey sandwich.) The bell pepper in my version isn\u2019t traditional, but I appreciate the note of color it adds to this otherwise pretty much white dish.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Ingredients:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>\u00a0<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>for the cream sauce:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">2 tablespoons butter<br \/>\n3 tablespoons flour<br \/>\n1-1\/4 cups robust turkey stock, warmed<br \/>\n1\/2 cup cream<br \/>\n1\/2 cup milk<br \/>\nCreole seasoning to taste (you may use just salt and pepper, but I like the zip of the seasoning)<br \/>\n1\/2 cup grated Parmesan cheese (plus a bit more if you like)<br \/>\n1\/4 cup dry sherry<br \/>\na handful of parsley, chopped<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>for assembly:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">1\/2 pound thin spaghetti, cooked<br \/>\nbutter as needed to saut\u00e9 vegetables (try to keep this to a minimum)<br \/>\n2 cups sliced mushrooms<br \/>\n1\/2 bell pepper (I used an orange one most recently), diced<br \/>\na light sprinkling of salt and pepper<br \/>\n2 cups pieces of cooked turkey<br \/>\n1 recipe cream sauce plus a little more milk if needed<br \/>\n1\/4 cup grated Parmesan cheese<br \/>\na sprinkling of paprika<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\"><em>Instructions:<\/em><\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Preheat the oven to 375 degrees.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">First, make the sauce. Melt the butter in a saucepan over medium heat, and whisk in the flour. Cook, whisking constantly, for 2 minutes.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Whisk in the turkey stock and bring the mixture to a boil. Boil, whisking constantly, for 2 minutes more. Turn off the heat and stir in the milk and cream. Heat the mixture until it is warm; then remove it from the heat and stir in the seasoning, cheese, sherry, and chopped parsley. Set aside.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Next, create the casserole. Place the cooked spaghetti in a 2- to 3- quart casserole dish. Cover it with about half of the sauce.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Melt a small amount of butter in a frying pan and saut\u00e9 the \u2018rooms and bell-pepper pieces until they soften. (Add a little more butter if you absolutely have to.) Dust them with salt and pepper.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Place the turkey on top of the spaghetti in the dish. Cover it with the saut\u00e9ed vegetables. Stir the mixture just a bit to make sure everything is moistened. Top the mixture with the remaining sauce.<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\"><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">If the tetrazzini looks a bit dry, add a bit more milk. Sprinkle the cheese on top of it, and throw on a little paprika for good measure.<\/span><\/span><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-align: left;\">\n<p><span style=\"font-family: &amp;amp;amp;\"><span style=\"font-size: 11pt;\">Cover the casserole dish and place it in the oven for 20 minutes; then uncover and cook until bubbly, about 10 minutes more.
