Rose is a warm hearted great-grandmother \u2026 and a wonderful cook. This cornbread recipe, sweetened with local maple syrup, is one of her favorites. It accompanies almost any dish\u2014particularly turkey!<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I used a well seasoned <a href=\"https:\/\/secure.lodgemfg.com\/storefront\/product1_new.asp?idProduct=3957\" target=\"_blank\">Lodge cast-iron corn-stick pan<\/a> from the <a href=\"http:\/\/www.lamsonsharp.com\/\" target=\"_blank\">Lamson &amp; Goodnow<\/a> factory store in Shelburne Falls, Massachusetts, to try Rose\u2019s recipe. (I had enough batter left to make a small round cornbread loaf as well.) <\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I loved the corn sticks; they were moist on the inside and crunchy on the outside. You may of course use an 8- or 9-inch square pan or a larger iron skillet as well. Timing will vary depending on what you use. The corn sticks took about 18 minutes; a larger pan could take up to 25.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">If you want to make cornbread stuffing, make this bread TODAY and use it as your stuffing base tomorrow.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Happy Thanksgiving, all\u2026<\/span><\/p>\n<p style=\"text-align: left;\"><strong><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2011\/11\/Rose\u2019s-Yankee-Cornbread.pdf\" target=\"_blank\">The Cornbread<\/a><\/span><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">1-1\/2 cups flour<br \/>\n1 cup cornmeal<br \/>\n3 tablespoons sugar<br \/>\n2-1\/4 teaspoons baking powder<br \/>\n3\/4 teaspoon salt<br \/>\n1 cup milk<br \/>\n4 tablespoons (1\/2 stick) butter, melted<br \/>\n2 eggs<br \/>\n1\/2 cup maple syrup<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Actually, Rose just stirs everything together all at once, but I decided to separate the dry ingredients from the wet. Here is my method:<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Preheat the oven to 425 degrees. Lightly grease the pan(s) of your choice.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">In a bowl combine the flour, cornmeal, sugar, baking powder, and salt.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">In another bowl combine the milk and butter; then whisk in the eggs, followed by the maple syrup. Stir this mixture lightly into the dry ingredients.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">If you are using a cast-iron pan, pop it into the preheated oven for 5 minutes; then carefully remove it and spoon in the batter. (If you\u2019re not using cast iron, just spoon the batter into the greased pan.)<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Bake until the cornbread passes the toothpick test, about 20 to 25 minutes.
