Key limes offer a remarkably fresh flavor that is somehow more mellow than any other citrus fruit I know.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Since I don\u2019t live in a tropical climate, I have to make do with bottled key-lime juice from <a href=\"http:\/\/keylimejuice.com\/\" target=\"_blank\">Nellie &amp; Joe\u2019s<\/a>. It means my recipes don\u2019t include lime zest\u2014but they DO still include that distinctive key-lime flavor.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">You may recall my previous recipes for <a href=\"http:\/\/www.ourgrandmotherskitchens.com\/?p=2855\" target=\"_blank\">Key-Lime Pie<\/a>, <a href=\"http:\/\/www.ourgrandmotherskitchens.com\/?p=2910\" target=\"_blank\">Key-Lime Chicken<\/a>, and <a href=\"http:\/\/www.ourgrandmotherskitchens.com\/?p=2954\" target=\"_blank\">Key-Lime White Chocolate Chip Cookies<\/a>, to name a few.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Last week when our cousins Alan and Jane came to dinner I decided to try Key-Lime Napoleons.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">I was inspired by a lemon pudding recipe I found at <a href=\"http:\/\/countrylife.lehmans.com\/\" target=\"_blank\">Lehman\u2019s Country Life<\/a>, the blog for the country-oriented Lehman\u2019s store in Ohio. Lehman\u2019s used lemon juice for its pudding, which was easily transformed into key-lime juice.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">The pudding looked to me as though it needed something to go with it, however. I originally intended to use it to stuff cream puffs, using the puff recipe I used when I made <a href=\"http:\/\/www.ourgrandmotherskitchens.com\/?p=5193\" target=\"_blank\">cranberry puffs<\/a> a couple of years ago. I ran out of time to make the cream puffs, however, so I purchased a package of <a href=\"http:\/\/www.puffpastry.com\/\" target=\"_blank\">Pepperidge Farm puff pastry<\/a> and made the Napoleons instead.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">My nephew Michael dubbed the Napoleons \u201cthat awesome dessert.\u201d<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">According to the <a href=\"http:\/\/www.foodtimeline.org\/foodpies.html#napoleons\" target=\"_blank\">Food Timeline<\/a>, Napoleons were probably not actually named for Napoleon Bonaparte, despite their suitability. (They are, after all, short and puffed up.) The Timeline suggests that the name comes from \u201cNapolitain,\u201d indicating that this pastry is based on one from Naples. Wherever they originated, we all loved them.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Feel free to make your own puff pastry if you are good with pastry. I\u2019m not. I have tried\u2014really\u2014but folding the pastry into the requisite 1000 creases is definitely way outside my skill set! If you buy the pastry, you\u2019ll end up with a very simple, very fun dessert. Did I mention that it\u2019s awesome?<\/span><\/p>\n<p style=\"text-align: left;\"><strong><span style=\"font-size: 11pt;\"><a href=\"http:\/\/tinkyweisblat.com\/_ourgrandmotherskitchens\/wp\/wp-content\/uploads\/2012\/04\/Key-Lime-Napoleons.pdf\" target=\"_blank\">Key-Lime Napoleons<\/a><\/span><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Ingredients:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the key-lime curd:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">3 egg yolks<br \/>\n1\/2 cup sugar<br \/>\n1\/2 cup key-lime juice<br \/>\n1 pint whipping cream<br \/>\n2 tablespoons sugar<br \/>\n1 teaspoon vanilla<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the pastry:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">4 puff pastry sheets, baked according to the manufacturer\u2019s instructions and cut into 36 more-or-less equal rectangles (it\u2019s hard to get them completely uniform)<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">for the glaze:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">a small amount of key-lime juice (start with 2 tablespoons)<br \/>\nconfectioner\u2019s sugar as needed (you will need more than you expect!)<br \/>\nfestive sprinkles (optional)<\/span><\/p>\n<p style=\"text-align: left;\"><em><span style=\"font-size: 11pt;\">Instructions:<\/span><\/em><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Combine the egg yolks, sugar, and key-lime juice in a 1-1\/2-quart nonreactive saucepan. Whisk to combine. Place the saucepan over medium heat, and cook, whisking, until the mixture lightens and attains the consistency of a light pudding. Remove from heat, and transfer to a medium-sized bowl.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">When this mixture (the key-lime curd) gets to room temperature, whip the cream, adding the sugar and vanilla toward the end of the whipping. If you want to make the curd in advance, refrigerate it until you are ready to whip the cream.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Add a little of the whipped cream to the key-lime curd, then fold the slightly creamy curd mixture into the whipped cream.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Prepare the glaze by mixing the key-lime juice with confectioner\u2019s sugar. It should be thick but spreadable.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 11pt;\">Assemble your Napoleons. Each one will take three rectangles of puff pastry. Place one rectangle on a plate, and cover it with a generous helping of the key-lime filling. Cover that with another rectangle, more filling, and a final rectangle.
